I received a copy of the Keto for Two cookbook and have been enjoying the recipes. I use a blend of WW and lazy keto in my weight loss journey and I knew I had to share this stuffed chicken breast recipe with you.
This is a great keto recipe and also a great fit for WW. The stuffed chicken breast recipe comes in at 8 WW Blue points as written. However, if you make the adjustments listed below you can reduce the points by half!

Stuffed Chicken Breast Recipe
Enjoy this delicious and easy to make stuffed chicken breast recipe with spinach for only
Ingredients
- 2 (4-ounce) boneless, skinless chicken breasts
- 1 ounce cream cheese, softened
- 2 tablespoons sour cream
- 1⁄2 (10-ounce) package fresh spinach, chopped
- 2 tablespoons chopped fresh basil
- 1 1/2 teaspoons minced green onions
- 1⁄4 cup shredded pepper jack cheese
- 1 clove garlic, minced
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon black pepper
Instructions
- Preheat oven to 375°F.
- Cut a slit into the side of each chicken breast to create a pocket.
- Combine all other ingredients in a medium bowl and beat until smooth.
- Fill each chicken breast with half of the mixture and secure pocket closed with toothpicks.
- Place chicken breasts in a baking pan and cook 35 minutes, or until chicken is no longer pink.
Notes
When using frozen spinach, make sure it’s completely thawed and drained before using it.
If there’s excess water, squeeze it dry with your hands or a cheesecloth before adding it to the filling.
If you don’t, your Stuffed Chicken Breast may come out a little runny.
