Southwestern Egg Bake Perfect For Your Next Brunch Get Together

This southwestern egg bake is the perfect addition to your next brunch with friends. The recipe uses only 5 ingredients. Yes, 5, which is about the max number of ingredients most recipes should take in my opinion. We are big fans of simple, yet delicious found and this recipe fits the bill.

Because I like finding shortcuts for recipes I use Southwest Style Hash Brown from Simply Potatoes. These are found in the refrigerator case at the grocery store.

Of course, you can make your own hash browns, but it’s going to make your ingredient list a lot longer. Plus, you’ll have to peel and shred potatoes which isn’t much fun, in my opinion, but it can be done. 

However, Simply Potatoes are fresh (never frozen or dehydrated) so I find it a very acceptable shortcut item to use in my recipes. Some additions to this recipe could include adding ham, mushrooms, sautéed peppers, etc. You’d add these ingredients between the two layers of potatoes. 

Southwestern Egg Bake Recipe

 Ingredients

3 cups Simply Potatoes Southwest Style Hash Browns, divided
3/4 cup salsa
3/4 cup shredded cheese
4 eggs
1/4 cup water
Avocado and sour cream for garnish, if desired.

Directions

1. Preheat oven to 350 degrees. Spray small casserole dish with cooking spray.

2. Place 1 1/2 cups of hash browns in the bottom of the casserole dish. Spread with salsa and top with remaining hash browns. Sprinkle cheese over top.

3. Mix eggs and water together. Pour over potatoes.

4. Bake for 40-45 minutes or until egg is set. 

5. Top with salsa, avocado, and sour cream if desired.

Serves 4.
