Perfect Party Appetizer – Cheesy Spinach and Bacon Dip Recipe

This cheesy spinach & bacon dip is amazing and perfect for game day fun or really any party you need an appetizer for.
It’s a recipe that is easy and quick to make which is our favorite kind of recipe.
The most time-consuming part of the entire process is cooking the bacon. I ended up cooking the bacon in the microwave because I was in a hurry and didn’t want to mess around with pan frying or baking it.
Of course, if you need a vegetarian option simply skip the bacon. If you’d like you could add sautéed mushrooms to add a bit more flavor to the dip.
Other than that, this recipe requires opening a couple of packages and dumping the ingredients in an oven safe dish. I love recipes that take minimal effort especially if I’m busy prepping for a party.
This dish requires minimal effort. Chop up the Velveeta and place it, along with some cream cheese, in an oven safe pan.
Toss in some thawed, drained spinach. Let the spinach sit in the strainer for a few minutes and then press the spinach against the strainer to remove as much water as possible before adding to the dish.
Add a half can of mild Ro*Tel tomatoes to the Velveeta, cream cheese and spinach.
Toss in the crisp crumbled bacon in the dish.
Bake in 350 degree oven for 10-15 minutes or until the cheese is completely melted and everything is hot.
Serve with tortilla chips and enjoy.
INGREDIENTS
8 ounces Velveeta Cheese
4 ounces cream cheese
6 slices bacon, cooked crisply & crumbled
5 ounces frozen chopped spinach, thawed & drained
1/2 can (10 ounces) of Ro*Tel Diced Tomatoes, mild
DIRECTIONS
Place all ingredients into an oven safe dish. Bake in 350 degree oven for 10-15 minutes or until all cheese is melted. Remove from oven, mix well. Serve with tortilla chips. Enjoy!
