Spicy Black Bean Taco Wraps – 1 Weight Watchers Freestyle Point

These vegetarian spicy black bean taco wraps are perfect for Meatless Mondays or anytime you need a low point Weight Watchers Freestyle meal on the table in around 20 minutes.
Plus, the black bean taco filling and wrap comes in at just 1 POINT without the guacamole, add guac and it’s only 6 points!

Spicy Black Bean Taco Wrap Ingredients (ONE Weight Watchers Freestyle Point)
2 T. extra virgin olive oil
1 15-oz. can black beans, drained and rinsed
2 T. water
1 t. ground cumin
½ t. chili powder
1 t. smoked paprika
¼ t. cayenne pepper
¼ t. dried Mexican oregano
Sea salt and black pepper, to taste
Lettuce leaves for the wrap
Optional: ½ medium red bell pepper, finely diced
Spicy Black Bean Taco Wrap Directions:
Heat olive oil in a skillet over medium heat. Add beans, water, cumin, chili powder, smoked paprika, cayenne, and Mexican oregano. Season with salt and black pepper, to taste, and stir to combine.
Cook, stirring occasionally until the beans are warmed through and the spices become fragrant around 4-5 minutes. Remove from heat and set aside.
Guacamole Ingredients: (5 Weight Watchers Freestyle Points for 1/4 of the recipe)
Serves: 4
2 large ripe avocados, pitted
1 medium tomato, seeded and diced
3 T. fresh lime juice
½ medium jalapeño, finely diced
Sea salt and black pepper, to taste
Guacamole Directions:
While the beans are cooking, mash the avocado in a small glass or other non-reactive bowl. Add tomato, lime juice, and jalapeño. Season with salt and black pepper, to taste, and stir to combine. Set aside.
Spicy Mango Salsa Ingredients: (0 Weight Watchers Freestyle Points)
2 medium mangos, peeled and chopped small
1 medium red bell pepper, chopped small
½ medium red onion, diced small
½ medium jalapeño, finely minced
3 T. fresh cilantro, finely chopped
2 T. fresh lime juice
Sea salt and black pepper, to taste
Spicy Mango Salsa Directions:
Combine mango, bell pepper, red onion, jalapeño, cilantro, and fresh lime juice in a medium glass or other non-reactive bowl. Season with salt and black pepper, to taste, and stir to combine.
Serve immediately or cover and place in the refrigerator until ready to use. Enjoy!
To Serve Spicy Black Bean Taco Wraps:
Transfer warm beans to a bowl and add diced bell pepper, if using. Sprinkle with additional spices, if desired. Serve immediately with large lettuce leaves for wrapping, along with fresh guacamole and this spicy mango salsa. Enjoy!
