Back to school time is so busy. Homework, sports games, after school activities, and so much more. I remember the kids always being hungry after they returned home from a long day of learning. Having recipes and ingredients on hand for easy to make healthy snacks will ensure that the kids have a tasty snack before they rush off to their next activity.
I found Del Monte Fruit Cups at Walmart for $2.00 a 4-pack which I think is a fantastic price. There is also a great selection available. I found mandarin oranges, diced pears, diced peaches, mixed fruit AND diced peaches in cinnamon and brown sugar—yum!!! Those immediately went into my cart and I’ll tell you right now that they are delicious. You can see my entire shopping trip here.
Be prepared to be amazed. I’ve put together three easy recipes that are yummy and can be made in just a few minutes.
Here’s what I have in the line up: Whipped Fruit Frozen Sandwiches, Mini Baked Fruit Cups, Fruit Salsa with Cinnamon Crisps.
WHIPPED FRUIT FROZEN SANDWICHES
INGREDIENTS
Cool Whip
Del Monte Fruit Cup of Choice, drained
Graham Crackers
Seriously….that is all you need.
DIRECTIONS
Mix 1 cup of cool whip with 1 drained Del Monte Fruit Cup of choice. I used the peaches with brown sugar & cinnamon.
Spread a healthy spoonful on half of a graham cracker and then top with the other half to create a sandwich.
Tightly wrap sandwich in plastic wrap and place in freezer. Patiently wait for at least an hour before digging in and enjoying this frozen treat.
MINI BAKED FRUIT CUPS
INGREDIENTS
Biscuits
Del Monte Fruit Cups, any variety
Cinnamon
Flour
DIRECTIONS
Mix 4 drained fruit cups of choice with approximately 1 teaspoon of cinnamon and 2 teaspoons of flour.
Roll out biscuit on floured surface. Place biscuit in cupcake paper and fill with fruit.

Bake according to biscuit directions. Cool completely before eating. Filling will be hot. Top with cool whip for an extra tasty treat.
FRUIT SALSA WITH CINNAMON CRISPS
If you thought the first two recipes were easy, this one is really going to blow your mind.
INGREDIENTS
Del Monte Mixed Fruit Cups
Tortilla Shells
Cinnamon Sugar (Mix 1 teaspoon of cinnamon to 1 tablespoon of sugar)
Cooking spray
DIRECTIONS
Lightly spray tortilla shell with cooking spray (butter flavor works best). Using a pizza cutter or knife, cut tortilla shells into four equal parts and sprinkle with cinnamon sugar. Repeat until you have enough crisps for all children.

Layer chips on cookie sheet and bake at 350 for 5-6 minutes or until tortillas are a light golden color.

Open a Del Monte Mixed Fruit No Sugar Added cup and drain liquid off. Serve 4 crisps with fruit cup. I use the no sugar added fruit, which tastes great, because the crisps have cinnamon sugar on them and its a nice compliment to the fruit without being too sweet.
There you go. Three treats that are perfect for a healthy after school snack.

LOVE the idea of using the fruit cups for fruit salsa. I always did this the hard way cutting everything by hand. Like shortcuts!
Oh I love the idea of whipped and frozen fruit sandwiches. As long as I use fat-free it could replace some of my ice cream treats which lately seem to sit and stay a while on my hips
