On Tuesday I co-hosted a cooking chat at The Motherhood with Chef George Duran. It was a great event. I had a lot of fun and I learned so much. Chef Duran had some wonderful ideas on how to turn your Thanksgiving leftovers into left uppers that left my mouth watering and making me wish that Thanksgiving was today.
All the recipes he shared can be found on Ready, Set, Eat a fantastic resource. I had never heard of Ready, Set, Eat prior to this event, but I’m glad we’ve been introduced as it is quickly becoming my favorite recipe site. Each recipe show the number of required ingredients, prep time, total time, and number of servings. FANTASTIC!!
In addition to sharing drool worthy leftover ideas with us Chef Duran also shared some tips about storing food. When it comes to leftover meats, George recommends storing them for up to 3-4 days in the refrigerator, and as long as 2-6 months in the freezer. Now, I don’t know about you, but our turkey is long gone by the time 4 days have passed, but if you have some left over be sure to follow George’s recommendations for storage length.
I also learned that when we buy ConAgra products to prepare for Thanksgiving and other holiday meals this year, we can also help those who will go hungry this holiday season. Through December, collect the UPC codes from ConAgra Foods brands like PAM Cooking Spray and Hunt’s canned tomatoes and donate them to participating schools, listed at http://www.ChildHungerEndsHere.com. ConAgra will donate one meal to Feeding America for each code. The goal is to donate 5 million meals during the 2011-2012 school year.
