Tomato & Feta Omelet

My favorite omelet ever. When your egg is just about set, toss some tomatoes and feta cheese on top. Fold omelet over and cook a few more minutes then enjoy! Sometimes I add a pinch of nutmeg to my eggs to boost the flavor–try it sometimes. Cheers,Deb
