DIY: Lemon Ice Cream

The other day I was reading different blogs and stumbled across The Stone Soup. It was love at first sight. I love the simplicity and ease of her cooking. It was love at first read. I immediately downloaded her free e-book and proceeded to make Lemon Ice Cream. I’ve never made ice cream a day in my life, but she made it look so easy (and it was!!!)

Ingredients: Heavy whipping cream, powerdered sugar, and lemon juice:

Mix lemon juice and powdered sugar together:

Pour whipping cream into a chilled metal bowl. I find using a chilled bowl brings the cream to a peak a bit quicker:

Whip the cream until soft peaks form. This is an awesome workout for your arm:

When your arm gets tired, enlist the help of someone else. (Alan took over for me):

After soft peaks form, cove and place in freezer. I left mine in the freezer overnight:

Scooped some up today to enjoy. YUM!!! The only thing I would do different is to use a bit less lemon juice. It was still so good and creamy. LOVED IT.

Go over to The Stone Soup and download her free ebook so you can have the ice cream recipe and lots of other yummy ones. She also has a virtual cooking school that looks like fun!

Enjoy!
